Y’all I got a Vegetti! If you don’t know what a Vegetti is you are missing out. I am gluten free and have been missing pasta lately so I got a Vegetti, (it’s a tool that allows you to take a zucchini and turn it into ‘noodles’) anyways needless to say I am obsessed. So tonight I made turkey meatballs and zucchini noodles. Here’s the recipe and directions…. Easy peasy 😊 

This is all you need for the entire meal
  • 1 pound ground turkey
  • 3/4 cup oats 
  • 1 egg
  • 2 tbls tomato sauce 
  • 1 tbls (ish) salt 
  • 1 tbls (ish) pepper
  • 1 tbls (ish) Oregano 
  • 1 tbls (ish) coriander 
  • If I have it on hand I’ll add some fresh parsley 
  1. Turn oven to 400
  2. Mix all ingredients   
  3. Roll 1-2 inch meatballs (should make about 30)  
  4. Put in the over for 18-20 minutes
  5. While meatballs are in the oven grab the vegetti and zucchini and make your noodles  
  6. Throw noodles into a sauté pan with some sauce, (I used tomato basil today but I also love it with vegan pesto.) toss around for about 5 minutes 
  7. Throw it into a bowl and top with meatballs and voilà 😊😊😊 

  
It’s an easy peasy healthy dinner that takes less that 30 minutes total. It’s also a great way to sneak in some veggies to your kids diet.Try it out and let us know what you think.
